WHAT IS OKONOMIYAKI , you may ask?
According to Wikipedia - Okonomiyaki is a Japanese savory pancake containing a variety of ingredients in a wheat-flour-based batter; it is an example of Konamon. The name is derived from the word okonomi, meaning "how you like" or "what you like", and yaki meaning "cooked".
THE BAVARIAN HUT is the FIRST to introduce OKONOMIYAKI, this TRULY and AUTHENTIC Japanese food experience to the Bruce Peninsula , especially to Owen Sound.
A perfect German- Japanese fusion food.
And yes, it is served with our well-known Cucumber Salad
IS SAUERKRAUT GOOD FOR YOU?        Although SAUERKRAUT ( German for "sour cabbage") is thought of as a German invention, Chinese laborers building the Great Wall of China over 2,000 years ago ate it as standard fare. Chinese sauerkraut, made from shredded cabbage fermented in RICE WINE,
* SAUERKRAUT -The Chinese Invented them.
* SAUERKRAUT - The Germans Perfected them.
* KOREAN SAUERKRAUT "KIMCHI" - As Korea's national dish, KIMCHI is one of Korea's most iconic foods, but how did this healthy and delicious fermented dish originate? Around 918 - 1392 the famous Chinese cabbage was introduced to Korea and soon after that they start adding CHILI PEPER (imported from the Americas)

2020 POSTED  FEBRUARY - 16           A Cup of Broth keeps the Doctor Abroad

What Is Bone Broth? It's pretty simple: Bone broth is an aromatic broth simmered with beef or poultry bones and vegetables. Bone broth is typically very low in calories, but can still satisfy hunger.
You can also repurpose bones from other dishes you've cooked, like roast chicken or turkey. Instead of throwing leftover bones and carcasses from meals in the garbage, save them to make broth. You can collect the bones in a bag and store them in your freezer until you are ready to cook them.
The difference between a broth and a stock lays mainly the amount of time it's simmered. The longer the liquid cooks, the more nutrients and minerals leach from the bones. Broths are made by simmering the bones and some meat (typically that's already been roasted) of an animal or fish for a long time, often more than 24 hours, versus a stock which can finish cooking in about three hours.
Because of the rich flavor of broth that comes from meat, vegetables and herbs, you can drink broth plain.
People often do this to remedy a cold or the flu. ... The meat can then be used for another recipe, or chopped and added back to the finished broth to create chicken soup, for example. A properly made bone broth is loaded with gut-healing nutrients that can help ease intestinal inflammation and repair a damaged gut lining.
Recipe: I use about Equal amount of leftover mixed bones (Chicken, Beef, Turkey) to water (1 Lb Bones to 1 quarts water) + 1 Onion cut in 4 including the skin+ 1 - 2 garlic clove, smashed and Salt to test. In the food industry we also use peals of washed vegetables and also clean vegetable ends. Place all ingredients in a very large pot OR in a slow-cooker. Cook on low for 8 to 16 hours. The longer the better.
For best quality, soups will last about 3 months in the freezer, though certain vegetable-based broth soups can be safely enjoyed 6 months or more. Pour the stock through a fine-mesh strainer to remove chicken parts, onion and garlic. The stock is now ready to use, or, you might prefer to do as we do, and put it in the fridge to chill until any fat solidifies on the top, making it easier to remove. (Though, there is really very little here, and some might prefer to leave it.)
While it's easiest to make broth in large batches, it can only be stored safely in the refrigerator for up to five days. To help your broth last longer, you can freeze it in small containers and heat up individual servings as needed.
To use: Simply warm up a cup or two in the morning, season it to taste, put it in a travel coffee mug that will keep it hot, and you're good to go. Takes as much time, if not less, as brewing a pot of coffee or even a cup of tea.
A study by Japanese researchers found that glycine, one of the most abundant amino acids in bone broth, promotes alertness during the day and a restful night's sleep. If you have issues with insomnia, reducing caffeine and drinking bone broth can be a powerful 1-2 punch in resetting your body's natural cortisol rhythms. Basically, that means helping you relax and de-stress
Remember to Label before placing soup in the freezer, label the outside of the container with the name of the recipe, date and reheating instructions.
Extra add on: Ginger slices - Lemon slices - Cinnamon stick - Egg/Parmesan mixture - defrosted Vegetable mix etc.
