T.B.H.  Chicken Salad

16 Lb            boneless, skinless Chicken breasts and Chicken thighs
6 cups           Celery, finely diced
2 cups           red Pepper, finely chopped
6 cups           Mayonnaise
1 cup             Relish, purchase
1                    Lemon, juice only
to taste           Salt
to taste           black Pepper, freshly ground
for garnish      Paprika
for garnish      Parsley
Poach Chicken in Chicken stock OR roast the Chicken in oven until is fully cooked.      Be careful not to overcook.     Breast meat may finish cooking before thigh meat is completely cooked.      Chill completely before assembling the salad. Dice the Chicken into fairly small dices and place in large bowl. Toss in; Celery, red Pepper, Relish, Mayonnaise Salt, Pepper and the Lemon Juice.      Test for Salt and Pepper. now add a little Paprika (mainly for coloring).      Cover and chill at least one hour before serving.       Garnish with Paprika and chopped Parsley.
Optional additions: 5 cups halved seedless red Grapes, OR 3-4 cups coarsely chopped Pecans, OR 1 cup coarsely crumbled Blue cheese OR 2 cup chopped Apple OR 1 cup dried Cranberries
